Identification and quantification of aroma compounds in 12 model meads produced using different types of honey (acacia, buckwheat and lime), different fermentations (spontaneous, inoculated with G. geotrichum moulds, inoculated with S. cerevisiae yeast) and prepared with and without wort heating. Data collected using gas chromatography-olfactometry and gas chromatography-mass spectrometry.
Project context: The project focuses on investigating key odorants in mead, the possible pathways of their formation, and the changes in their concentrations during the production process. It also examines the influence of different honey varieties, fermentation types, and manufacturing processes.

Files included: the dataset consist on 8 files: Odorants identification.csv and Odorants identification.xlsx (odorants, their CAS numbers, odor descriptions, Retention Indices and presence in 12 model mead samples); Odorants quantitation.csv and Odorants quantitation.xlsx (concentrations of odorants in 12 model meads); Profile Sensory Analysis data.csv and Profile Sensory Analysis data.xlsx (results of the assessment of Profile Sensory Analysis of 12 model mead samples); Quantitation details.csv and quantitation details.xlsx (quantitated odorants, isotopically substituted standards used in quantitation, quantifier ions, calibration line equations and R2). Files Quantitation details are supplementary material for file Odorants quantitation and should be used together.
