Zbiór danych obejmuje wyniki analiz uzyskanych w ramach realizacji projektu „Rodzaj adsorbentu a skuteczność adsorpcji substancji niepożądanych z jadalnych olejów niszowych” (NCN PRELUDIUM 22 UMO-2023/49/N/NZ9/03464). Oceniono skuteczność 12 adsorbentów w oczyszczaniu nierafinowanych olejów z pestek dyni i orzecha włoskiego. Zbadano ich wpływ na usuwanie związków niepożądanych, jakość olejów oraz zachowanie cennych składników bioaktywnych. Proces adsorpcji prowadzono poprzez mieszanie oleju z adsorbentem przez 10 minut, a następnie oddzielano adsorbent metodą membranowej filtracji próżniowej. Badano różne dawki adsorbentu (2–5%) oraz temperatury 30°C i 90°C. Jakość olejów przed i po adsorpcji oceniano na podstawie liczby kwasowej (PN-EN ISO 660:2021-03), liczby nadtlenkowej (PN-EN ISO 3960:2017-03) oraz liczby anizydynowej (PN-EN ISO 6885:2016-04). Wyznaczono zmiany: barwy metodą CIE Lab, profilu kwasów tłuszczowych metodą chromatografii gazowej GC-FID, zawartości chlorofili i karotenoidów metodą spektrofotometryczną, stabilności oksydacyjnej, fitosteroli metodą chromatografii gazowej, zawartości fosforu za pomocą ICP-OES oraz zawartości wody metodą miareczkowania Karla Fischera. Na podstawie uzyskanych rezultatów zaprojektowano 7 mieszanin adsorbentów oraz wybrano optymalne warunki adsorpcji w celu poprawy stabilności oksydacyjnej i jakości olejów, przy jednoczesnym ograniczeniu strat fitosteroli, karotenoidów i innych cennych składników.
