This dataset accompanies a study focused on the development of a luminescent, colorimetric sensor for real-time detection of food spoilage via ammonia release. The sensor is based on Rhodamine 800 (Rh800), a xanthene derivative dye known for its low toxicity, high photostability, and red-range emission. Rh800 was incorporated into a sol–gel-derived silica matrix through in-situ impregnation. The dataset includes optical measurements (color and luminescence intensity), calibration curves, and quantitative analysis (LOD, LOQ, and RSD) in response to varying ammonia concentrations, relevant to meat spoilage detection.
Data were collected in five replicates per concentration. The calculated detection parameters are as follows:
The dataset also includes NMR spectroscopy results, which reveal the hydrolysis of Rh800 under alkaline conditions, contributing to the understanding of dye stability and degradation mechanisms.
This data supports the development of low-cost, intuitive food quality monitoring solutions using luminescent dye-based sensors.
